2022 Sabino Chardonnay

After several years of trial and error, Chardonnay has finally found its place in the Kingston vineyards. The Sabino 2022 was a warm vintage which made it hard to perfect. However, thanks to its early harvest and lots of detailed work in the cellar, the final product is a perfect balance of fluidity and concentration. The wine has the classic Chardonnay aromas: notes of pastries or bread crust, nuts, and delicate wild herbs. These scents contribute to a remarkable density and weight in the mouth. The mouthfeel keeps its fluidity thanks to the significant acidity and freshness. Smooth movement and great volume lead to a long and delicious finish. This wine would be well-paired with a rockfish, like turbot, accompanied with brown butter and capers.
