We ferment our Sabino Chardonnay in a mixture of French oak and an egg-shaped concrete tank. Because we let it ferment naturally, it takes a long time to finish fermentation. We also bottle it later than most Chilean Chardonnay producers. By waiting, we let the vineyard, soil, and grape speak more clearly.

2017 was one the warmest years since we planted our first vines in Casablanca. We make a variety of wines with grapes that ripen at different times, and our harvest can be very long - from late February to early May.  Read more in Amael's tasting notes ››

**(93 Points)** Enticing chardonnay that shows so much dried peach and mango character, but a real thread of freshness with dried citrus rind and spices. Full-bodied and very layered with a really plush center palate, played out against some zesty acidity. Really well done. - *James Suckling* **(92 Points)** Amael Orrego uses mostly concrete eggs to make this leesy, low-sulphur Chardonnay with some wooded and stainless steel components too. Savoury, subtle and complex with beeswax and citrus flavours and very subtle oak. - *Tim Atkin* **(91 Points)** - *Descorchados*
